Hangikjot is a very popular food in Iceland. But, it is not an everyday food. It can be eaten cold or warm which is good, with cooked potatoes, white sauce, peas and pickled red cabbage. It is one of the MOST delicious smoked products in the world. There are many different varieties of Hangikjot: lamb, pork, mutton and fish. Sounds delicious! Here is the recipe:
Ingredients: 1 kg hangikjot, 1 l Water (Ratio: 1:1)
1. First you smoke the meat and then hang it in a cool dry place
2. Cook for 40 minutes per kilo (1 kilo = 40 minutes, 2 kilo = 80 minutes and so on)
3. Allow the meat to sit in cooking liquid for 30 minutes after taking it off the stove
4. Then serve in traditional way
Sometimes you can serve this with leaf bread with butter on the side. After that, drink the Icelandic Christmas drink (highly recommended)

Prawns in Cream Sauce

Prawns in cream sauce is a delicious but tender dish. This dish is served as they are prepared with toast or maybe mash potatoes. Sometimes, you can add a little brandy and peppers to the dish to make it more colourful. The cream is added at the end. Here is the recipe:
Ingredients: 30 prawns (larg size in their shells),5 tablespoons butter,2 garlic cloves (crushed),salt & freshly ground black pepper,1 large red bell pepper (seeded & chopped),1 green bell pepper (seeded & chopped),5 ounces button mushrooms (sliced),1 teaspoon brandy,2 cups cream
Ingredients: 30 prawns (larg size in their shells),5 tablespoons butter,2 garlic cloves (crushed),salt & freshly ground black pepper,1 large red bell pepper (seeded & chopped),1 green bell pepper (seeded & chopped),5 ounces button mushrooms (sliced),1 teaspoon brandy,2 cups cream
- Split prawns lengthwise with a sharp knife, without completely separating the halves.
- Melt 3 tbsp of butter with the crushed garlic, salt + pepper & brush the prawns w/it. Chill for 30 min under refrigeration.
- Seed & chop the bell peppers & slice the mushrooms. Melt the remaining 2 tbsp of butter in a lrg non-stick frying pan, saute peppers & mushrooms for a few minutes & remove to a dish.
- Place prawns in the frying pan (cut side down) & fry for 2-3 min (in batches if necessary). Drizzle the brandy over them & ignite it.
- When the flame dies down, add the cream + veggies & simmer for 2 minutes. Serve immediately
- This recipe creates 30 prawns which can be served to 6 people
Bolludagur Buns

These are buns served on the Monday before Shrove Tuesday. This bun day is a big business day for bakeries since Icelanders like to stuff themselves with these buns. Now, much of the buns are eaten on Sundays because Mondays is a work day. This day is also known as 'Spanking Day'. During earlier times, people would flagellate themselves to remind themselves the pain that Jesus had to go through (weird, huh?). Here is the recipe:
Ingredients: 1 cup water, 1/2 cup butter, 1/2 teaspoon salt, 1/4 cup sugar, 1 cup flour, 3 large eggs, 1 cup whipping cream, 2 tablespoons vanilla sugar (or 2 tsp. vanilla extract plus 2 Tbsp. powdered sugar), 1/4 cup raspberry jam, 7 ounces microwavable dipping chocolate
Directions:
1.Preheat oven to 375ºF.
2.In a large saucepan over a medium-high burner, stir together water, butter, salt and sugar until butter is melted.
3.Add flour and beat quickly until mixture thickens and pulls away from the side of the pan. Remove pan from heat.
4.Vigorously whisk in one egg at a time until batter is the consistency of thick pudding.
5.Drop heaping tablespoons of the batter on a parchment-lined or lightly greased baking sheet.
6.Bake in preheated oven for 30 minutes, until golden brown (Note: Do not open the oven door during this cooking period because your buns will fall – and no one likes fallen buns).
7.Transfer buns to racks to cool.
8.Whip together the cream and vanilla sugar (or vanilla extract and powdered sugar) until stiff peaks form.
9.When buns have cooled, slice each one in half and spread lower half with raspberry jam. Top with a dollop of whipped cream, place the remaining half on top, and ice with melted chocolate.
